One of FJ’s favourite sweet treats is a custard slice {vanilla to be exact} so rifling through the hoards of cookbooks I have come up with this little version. Not too sweet, but still with that super crispy puffed pastry top!
This slice was a hit around here, and had several hands going back for another helping {this may have happened more than once for one particular sweet tooth!}
Super easy and quick to make, super quick to see an empty plate! Hope you enjoy!

Ingredients
- 3 sheets store-bought puff pastry
- 1 1/2 cups milk
- 1 1/2 cups cream
- 50g butter
- 2 tsp vanilla essence
- 2/3 cup caster sugar
- 1/3 cup cornflour {for thickening}
- 1/2 cup water
- 2 60g eggs
- Icing Sugar {for dusting}
Instructions
- Preheat oven to 180 degrees C {350 Farenheit}
- Trim puff pastry to fit a 20x30cm slice tray {or lamington tray for a few extra serves!}
- Line two trays with baking paper.
- Place one pastry sheet atop the first tray {slice base}and lay with another sheet of baking paper. Place the second tray on top with the second pastry sheet {slice topping}.
- Bake in oven for 30 minutes or until pastry is golden and puffed and crispy.
- Once cooked, keep in trays and cool.
- Meanwhile, to make vanilla custard cream, place milk, cream, butter, vanilla and sugar in a saucepan over medium heat.
- Mix the cornflour and water and whisk into the hot cream mixture.
- Seperate eggs and whisk in the yolks only.
- Continue stirring, allowing it to simmer until the mixture has thickened.
- Remove from heat and cool to room temperature.
- Spread vanilla cream filling over the first pastry sheet {forming the base and filling of the slice}. Top with the second pastry sheet {the topping of the slice}.
- Refrigerate until set.
- Dust with icing sugar before serving.
- Makes 12 slices.
